Ingredients
  

For the Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
For the Filling
  • 2 large eggs room temperature
  • 1/2 cup fresh lemons juiced
  • 1 tbsp dried culinary lavender
  • 1 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup powdered sugar for dusting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare an 8x8-inch baking dish by lining it with parchment paper.
  2. Cream the softened unsalted butter and granulated sugar in a mixing bowl until fluffy.
  3. Combine the all-purpose flour and a pinch of salt into the butter-sugar mixture.
  4. Press the mixture into the bottom of the prepared dish and bake for 15-20 minutes until lightly golden.
  5. Whisk together the eggs, lemon juice, lemon zest, granulated sugar, and dried lavender until smooth.
  6. Pour the lemon filling over the baked crust and return to the oven for 20-25 minutes.
  7. Cool completely in the baking dish before cutting into bars and dusting with powdered sugar.
