- Preheat your oven to 425°F (220°C).
- Peel the kohlrabi and slice it into 1/2-inch thick rounds.
- In a bowl, combine olive oil, garlic powder, onion powder, dried thyme, rosemary, oregano, and smoked paprika.
- Brush each kohlrabi steak generously with the marinade and season with salt and freshly ground pepper.
- Lay the kohlrabi steaks in a single layer on a lined baking sheet.
- Bake in the oven for 12-15 minutes, turn them over, and continue roasting for another 10-12 minutes until tender.
- Remove from the oven and let the steaks rest for a couple of minutes; garnish with fresh parsley if desired.
