  • 2 tablespoons Lemon Juice juice from 2 fresh lemons
  • 1 tablespoon Fresh Ginger
  • 4 cloves Garlic
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Chili Powder adjust based on your spice preference
  • 0.5 teaspoon Cayenne Powder adjust based on your heat tolerance
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Cumin
  • 0.25 cup Fresh Cilantro for garnish
  • 1 teaspoon Kosher Salt
  • 0.5 teaspoon Black Pepper
For the Chicken
  • 1 whole Whole Chicken (5 lbs) spatchcock for even cooking

Method
 

Directions
  1. Preheat the oven to 375°F, placing a cooling rack over a large baking sheet.
  2. Mix the marinade by combining the yogurt, lemon juice, ginger, garlic, turmeric, chili powder, cayenne, cinnamon, cumin, cilantro, salt, and pepper in a medium bowl.
  3. Spatchcock the chicken by carefully cutting along the spine with kitchen shears and flattening it.
  4. Coat the chicken thoroughly with the yogurt marinade, rubbing it under the skin.
  5. Place the chicken on the prepared baking sheet or in a roasting pan skin-side up.
  6. Bake for approximately 1 hour and 25 minutes, or until the internal temperature reaches 165°F.
  7. Serve hot alongside lemon rice and raita.
