Preparing the Meatloaf
- Preheat your oven to 350°F. Start by lining a baking sheet with foil for easy cleanup later.
- Combine the first eight ingredients in a large mixing bowl. Use your hands or a spoon to mix until just blended; you want everything incorporated, but don’t overwork it!
- Shape half of the ground beef mixture into a 9×5-inch rectangle in the center of the lined baking sheet.
- Place the cream cheese and diced jalapenos down the middle of the rectangle.
- Cover the filling with the remaining beef mixture, pressing firmly along the edges to completely seal in your delicious stuffing.
- Brush the tops and sides of the meatloaf with ketchup for a sweet-tart flavor.
- Arrange the halved bacon slices side by side on top of the meatloaf.
- Bake in the preheated oven for 60 to 70 minutes.
- Cool for 10 to 15 minutes before slicing.
