Ingredients
  

For the Meatloaf
  • 2 pounds lean ground beef
  • 2/3 cup diced onion
  • 2 large eggs
  • 1 cup dry breadcrumbs
  • 3/4 cup milk
  • 1 teaspoon seasoned salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon dried basil
For the Stuffing
  • 8 ounces cream cheese
  • 2 to 3 pieces jalapenos seeds removed
For the Topping
  • 1/2 cup ketchup
  • 5 slices bacon halved

Method
 

Preparing the Meatloaf
  1. Preheat your oven to 350°F. Start by lining a baking sheet with foil for easy cleanup later.
  2. Combine the first eight ingredients in a large mixing bowl. Use your hands or a spoon to mix until just blended; you want everything incorporated, but don’t overwork it!
  3. Shape half of the ground beef mixture into a 9×5-inch rectangle in the center of the lined baking sheet.
  4. Place the cream cheese and diced jalapenos down the middle of the rectangle.
  5. Cover the filling with the remaining beef mixture, pressing firmly along the edges to completely seal in your delicious stuffing.
  6. Brush the tops and sides of the meatloaf with ketchup for a sweet-tart flavor.
  7. Arrange the halved bacon slices side by side on top of the meatloaf.
  8. Bake in the preheated oven for 60 to 70 minutes.
  9. Cool for 10 to 15 minutes before slicing.
