Ingredients
  

For the Fritter Mixture
  • 2 medium Fresh Tomatoes chopped and drained
  • 1 cup Vegan Feta crumbled
  • 1 medium Red Onion grated
  • 1/2 cup Fresh Parsley chopped
  • 1/4 cup Fresh Mint chopped
  • 1/4 cup Fresh Dill chopped
  • 2 stalks Spring Onion chopped
  • 1/2 cup All-Purpose Flour or gluten-free chickpea flour
  • to taste Salt & Pepper essential for seasoning
  • for frying tablespoons Olive Oil
For the Vegan Tzatziki
  • 1 cup Vegan Yogurt soy or coconut-based
  • 1 medium Cucumber grated and drained
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 1/4 cup Fresh Dill
  • to taste Salt & Black Pepper

Method
 

Fritters Preparation
  1. Finely chop fresh tomatoes and drain excess moisture using a sieve or paper towels.
  2. In a large mixing bowl, combine the chopped tomatoes, grated red onion, fresh herbs, and crumbled vegan feta. Season generously with salt and pepper and mix thoroughly.
  3. Gradually stir in ½ cup of all-purpose flour, allowing it to rest for 10 minutes.
  4. Heat olive oil in a skillet over medium heat. Scoop spoonfuls of the fritter batter into the hot oil and flatten them gently. Fry for 2–3 minutes on each side until golden brown.
  5. Transfer the fritters onto a paper towel-lined plate to drain excess oil and serve hot.
Tzatziki Preparation
  1. Blend vegan yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper. Refrigerate until ready to serve.
