Fritters Preparation
- Finely chop fresh tomatoes and drain excess moisture using a sieve or paper towels.
- In a large mixing bowl, combine the chopped tomatoes, grated red onion, fresh herbs, and crumbled vegan feta. Season generously with salt and pepper and mix thoroughly.
- Gradually stir in ½ cup of all-purpose flour, allowing it to rest for 10 minutes.
- Heat olive oil in a skillet over medium heat. Scoop spoonfuls of the fritter batter into the hot oil and flatten them gently. Fry for 2–3 minutes on each side until golden brown.
- Transfer the fritters onto a paper towel-lined plate to drain excess oil and serve hot.
Tzatziki Preparation
- Blend vegan yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper. Refrigerate until ready to serve.
