Preparation
- Preheat your oven to 350°F (175°C) and position a rack in the upper third.
- Pat dry the rack of lamb with paper towels. Season generously with kosher salt and freshly cracked black pepper on all sides.
- Mix together garlic cloves, flat-leaf parsley, rosemary, olive oil, and the remaining salt and pepper in a bowl.
- Heat a skillet over high heat and add vegetable oil until shimmering.
- Sear the lamb rib side up for about 5 minutes, then flip and sear the opposite side for another 3-4 minutes.
- Brush the herb garlic oil mixture over the lamb, transfer it to a baking sheet, and roast for 15 minutes.
- Tent with foil and let the lamb rest for 10 minutes before carving into chops.
