For the Rack
  • 1 rack Rack of Lamb Frenched rack is ideal for presentation
  • 2 teaspoons Kosher Salt Adjust based on personal preference
  • 1 teaspoon Freshly Cracked Black Pepper Freshly ground offers the best flavor
For the Herb Mixture
  • 4 cloves Garlic Cloves Fresh garlic preferred
  • 1/4 cup Fresh Flat-Leaf Parsley Can substitute with dried (1 tbsp dried for ¼ cup fresh)
  • 1 tablespoon Fresh Rosemary Thyme can be used as an alternative
  • 2 tablespoons Extra-Virgin Olive Oil Quality oil enhances the dish
For Searing
  • 2 tablespoons Vegetable Oil Can substitute canola oil or grapeseed oil

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and position a rack in the upper third.
  2. Pat dry the rack of lamb with paper towels. Season generously with kosher salt and freshly cracked black pepper on all sides.
  3. Mix together garlic cloves, flat-leaf parsley, rosemary, olive oil, and the remaining salt and pepper in a bowl.
  4. Heat a skillet over high heat and add vegetable oil until shimmering.
  5. Sear the lamb rib side up for about 5 minutes, then flip and sear the opposite side for another 3-4 minutes.
  6. Brush the herb garlic oil mixture over the lamb, transfer it to a baking sheet, and roast for 15 minutes.
  7. Tent with foil and let the lamb rest for 10 minutes before carving into chops.
