Ingredients
  

For the Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil or any cooking oil
For the Seasoning
  • 1 teaspoon Garlic powder or fresh garlic
  • 1 teaspoon Onion powder optional
  • 1 teaspoon Smoked paprika or regular paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
For the Crispy Crust
  • 1 cup Panko breadcrumbs or regular breadcrumbs
  • 1/2 cup Grated Parmesan cheese freshly grated preferred
  • 1/2 cup Shredded mozzarella cheese or sharp cheddar as substitute
  • 1/4 cup Unsalted butter melted
  • 1/4 cup Mayonnaise or Greek yogurt
  • 1 tablespoon Dried parsley or fresh herbs
Optional Garnishes
  • 1 tablespoon Fresh parsley for garnish
  • 2 pieces Lemon wedges for serving

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry with a paper towel. Brush both sides with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Heat a skillet over medium-high heat, add a splash of olive oil, and sear the chicken for 2-3 minutes on each side until golden brown.
  4. In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, shredded mozzarella, melted butter, mayonnaise, dried parsley, and a sprinkle of garlic powder. Mix until crumbly.
  5. Spread the crust mixture generously over each chicken breast, pressing down lightly.
  6. Transfer the chicken to the prepared baking sheet and bake for 20-25 minutes or until an internal temperature of 165°F (74°C) is reached.
  7. Allow the chicken to rest for about 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
