Cooking Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the chicken breasts dry with a paper towel. Brush both sides with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium-high heat, add a splash of olive oil, and sear the chicken for 2-3 minutes on each side until golden brown.
- In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, shredded mozzarella, melted butter, mayonnaise, dried parsley, and a sprinkle of garlic powder. Mix until crumbly.
- Spread the crust mixture generously over each chicken breast, pressing down lightly.
- Transfer the chicken to the prepared baking sheet and bake for 20-25 minutes or until an internal temperature of 165°F (74°C) is reached.
- Allow the chicken to rest for about 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
