How to Make Hot Chocolate Peppermint Fudge
  1. Prepare Baking Dish: Line an 8×8” pan with foil or parchment paper, then spritz it with cooking spray to ensure easy removal later.
  2. Melt Fudge Mixture: In a double boiler, combine semi-sweet chocolate chips, milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir gently over medium heat until the mixture is completely melted and smooth—avoid boiling!
  3. Add Marshmallows: Stir in mini marshmallows, mixing for about 1 minute until well incorporated.
  4. Final Mixture: Remove from heat, add vanilla extract (or peppermint extract), and mix until evenly distributed.
  5. Transfer & Chill: Pour the mixture into your prepared pan, press any remaining marshmallows on top, then chill in the refrigerator for 4 hours until solid.
  6. Drizzle with Chocolate: Melt the remaining chocolate in the microwave, drizzle over the cooled fudge, and allow it to set completely before cutting into squares.
