How to Make Hot Chocolate Peppermint Fudge
- Prepare Baking Dish: Line an 8×8” pan with foil or parchment paper, then spritz it with cooking spray to ensure easy removal later.
- Melt Fudge Mixture: In a double boiler, combine semi-sweet chocolate chips, milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir gently over medium heat until the mixture is completely melted and smooth—avoid boiling!
- Add Marshmallows: Stir in mini marshmallows, mixing for about 1 minute until well incorporated.
- Final Mixture: Remove from heat, add vanilla extract (or peppermint extract), and mix until evenly distributed.
- Transfer & Chill: Pour the mixture into your prepared pan, press any remaining marshmallows on top, then chill in the refrigerator for 4 hours until solid.
- Drizzle with Chocolate: Melt the remaining chocolate in the microwave, drizzle over the cooled fudge, and allow it to set completely before cutting into squares.
