Method
 

How to Make Haupia
  1. Mix cornstarch and water in a small bowl until completely dissolved. Set aside.
  2. Heat coconut milk and sugar in a saucepan over medium heat. Stir until just about to boil.
  3. Gradually combine the cornstarch-water mixture into the saucepan while whisking continuously.
  4. Cook on low heat while whisking frequently for 10-15 minutes until thickened.
  5. Pour the mixture into a greased 8x8 pan. Cool at room temperature, then refrigerate for 1-2 hours.
