Method
 

How to Make French Onion Macaroni and Cheese
  1. Bring a large pot of salted water to a rolling boil for the pasta. Butter your baking dish if baking.
  2. Melt butter in a skillet over medium-high heat. Add onions and thyme, cover and cook until softened.
  3. Uncover and cook until caramelized to a rich brown, adding water if they start to burn.
  4. Preheat your oven to 450°F (230°C). Cook the pasta until just shy of al dente.
  5. Remove herb sprigs, add sherry vinegar and scrape up bits. Stir in remaining butter and flour.
  6. Gradually whisk in milk, seasoning with salt and pepper. Stir in cheeses until melted.
  7. Mix in drained pasta. Pour into baking dish, top with baguette slices and reserved cheese.
  8. Bake until bubbly and golden, about 10-15 minutes. Broil for 1-2 minutes for a crispier top.
  9. Garnish with fresh thyme before serving if desired.
