How to Make French Onion Macaroni and Cheese
- Bring a large pot of salted water to a rolling boil for the pasta. Butter your baking dish if baking.
- Melt butter in a skillet over medium-high heat. Add onions and thyme, cover and cook until softened.
- Uncover and cook until caramelized to a rich brown, adding water if they start to burn.
- Preheat your oven to 450°F (230°C). Cook the pasta until just shy of al dente.
- Remove herb sprigs, add sherry vinegar and scrape up bits. Stir in remaining butter and flour.
- Gradually whisk in milk, seasoning with salt and pepper. Stir in cheeses until melted.
- Mix in drained pasta. Pour into baking dish, top with baguette slices and reserved cheese.
- Bake until bubbly and golden, about 10-15 minutes. Broil for 1-2 minutes for a crispier top.
- Garnish with fresh thyme before serving if desired.
