Ingredients
  

For the Casserole
  • 6 pieces English muffins Toasted
  • 12 ounces Canadian bacon, chopped
  • 8 large eggs
  • 1.33 cups cream Can substitute with half-and-half
  • 2/3 cup whole milk
  • 1 teaspoon kosher salt
  • 0.5 teaspoon seasoned salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried mustard powder
  • 1 cup Monterey Jack, shredded Optional
For the Hollandaise Sauce
  • 4 pieces egg yolks
  • 0.5 cup cream
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 0.125 teaspoon cayenne pepper
  • dash kosher salt
  • 0.5 cup butter, melted

  • 9x13 inch casserole dish

Method
 

Casserole Assembly
  1. Grease a 9×13 inch casserole dish.
  2. Spread half of the chopped Canadian bacon evenly at the bottom.
  3. Toast and chop the English muffins into 1 inch pieces.
  4. Layer half of the muffins on top of the bacon, followed by the remaining bacon and then the rest of the muffins.
  5. Whisk together eggs, cream, milk, and seasonings in a large bowl.
  6. Optional: Sprinkle shredded cheese over the layers.
  7. Pour the egg mixture over the casserole evenly.
  8. Cover and refrigerate overnight.
  9. Preheat the oven to 375°F.
  10. Bake covered for 35 minutes, then uncover and bake for another 10-15 minutes.
Hollandaise Sauce
  1. Blend egg yolks, cream, lemon juice, mustard, cayenne, and salt until mixed.
  2. Melt butter and slowly drizzle into the blender until smooth.
  3. Drizzle the hollandaise sauce over the baked casserole before serving.
