For the Cheese
  • 8 ounces Cream Cheese Sour cream can lighten the dip if needed.
  • 2 cups Shredded Cheese (Cheddar, Monterey Jack) Freshly grated cheese melts better.
For Seasoning
  • 1 tablespoon Chili Powder Add more for a spicier dip.

Equipment

  • large skillet

Method

Make Cowboy Queso
  1. In a large skillet, brown the ground beef and sausage over medium heat until fully cooked, about 5-7 minutes. The meat should be nicely browned and fragrant.
  2. Stir in black beans, corn, diced tomatoes, jalapeños, and chili powder. Cook for an additional 3-5 minutes until everything is heated through and nicely combined.
  3. Reduce the heat to low and add the cream cheese. Stir continuously until the cream cheese is completely melted and smoothly combined with the meat and veggies.
  4. Gradually stir in the shredded cheese, allowing it to melt into the mixture. This should create a smooth and creamy consistency, perfect for dipping.
  5. Immediately serve warm with tortilla chips for dipping. Enjoy the gooey goodness with friends and family!
