Ingredients
  

For the Crust
  • 2 cups Nilla Wafers Finely crushed
  • 1/4 cup Granulated Sugar For crust
  • 1/2 cup Unsalted Butter Lightly melted
For the Cheesecake Filling
  • 16 oz Cream Cheese Softened, brick-style
  • 3 medium Ripe Bananas Well-mashed
  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 3/4 cup Granulated Sugar For filling
  • 1 pkg Instant Banana Cream Pudding Mix Do not substitute
  • 1 tbsp Pure Vanilla Extract Optional: banana extract
  • 3 large Eggs Room temperature
For Toppings
  • 1 cup Whipped Cream Optional, homemade preferred
  • 2 medium Bananas Freshly sliced
  • 1/2 cup Nilla Wafers For topping

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C) and line the springform pan with parchment paper.
  2. Combine crushed Nilla Wafers, sugar, and melted butter in a bowl. Press into the pan and bake for 10 minutes. Cool completely.
  3. Beat cream cheese until smooth. Gradually mix in mashed bananas, sour cream, sugar, pudding mix, and vanilla. Mix in the eggs gently.
  4. Wrap the bottom of the springform pan with aluminum foil. Place in an oven bag and set inside a roasting pan.
  5. Pour the filling into the cooled crust. Bake in the water bath for 70-80 minutes. Cool in the oven for 1 hour.
  6. Chill in the refrigerator for at least 5-6 hours or overnight.
  7. Once set, remove from the springform pan and decorate with whipped cream, sliced bananas, and Nilla Wafers.
