For the Carbonara Cream
  • 4 large Egg Yolks
  • 1 cup Parmesan Cheese
  • 1/2 cup Pecorino Cheese
  • 1 cup Whole Milk
  • 1 teaspoon Kosher Salt adjust to taste
For the Sandwich Assembly
  • 6 oz Pancetta
  • 2 whole Burger Buns any preferred bread
  • 1/2 cup Greek Yogurt or sour cream
  • 2 tablespoons Chives for garnish
  • 1 tablespoon Butter for greasing

Method
 

Preparation
  1. Preheat the oven to 400°F for crisping the pancetta.
  2. Crisp the pancetta on a baking sheet for about 45 minutes until golden.
  3. Prepare the carbonara cream in a double boiler by whisking egg yolks, whole milk, and cheeses for about 5 minutes.
  4. Reduce oven temperature to 300°F. Whisk together yogurt, eggs, milk, chives, and seasonings.
  5. Bake the soufflé egg mixture in greased ramekins in a water bath for around 30 minutes until fluffy.
  6. Toast the burger buns in a skillet until golden and crispy.
  7. Assemble the sandwich with carbonara cream, crispy pancetta, and soufflé eggs, topping with cheese and the other bun.
