How to Make Key Lime Pie Chia Pudding
- In a mixing bowl, combine chia seeds and almond milk along with maple syrup. Stir well to mix evenly and refrigerate for at least 2 hours until set.
- While the pudding sets, drain and rinse the soaked cashews. Blend them with coconut milk, lime juice, lime zest, and maple syrup until smooth.
- Once the chia pudding is thickened, divide it into serving jars and top each with the cashew cream.
- Cover and refrigerate again for at least 2 hours to meld the flavors before serving.
