Churro Preparation
- Combine flour and dry spices in a stand mixer until well mixed.
- Boil water and ghee together, then carefully pour it into the flour mixture. Stir until smooth.
- Chill the dough in a piping bag for 30 minutes.
- Prepare the cheese coating by mixing cheddar cheese, chopped spring onions, fresh coriander, and crushed cumin in a bowl.
- Heat oil in a deep pan to 190°C (375°F) and test the heat.
- Pipe churro dough into hot oil, frying until golden and crispy, about 2 minutes per side.
- Toss the fried churros in the cheese mixture while they're still hot.
- Prepare the dip by blending cilantro, mint leaves, lime juice, and green chillies into the sour cream.
- Serve churros hot with the lime-coriander sour cream dip.
