Ingredients
  

For the Churros Dough
  • 1 cup Plain Flour All-purpose flour works well as a substitute.
  • 1 cup Boiling Water Hot water also works.
  • 2 tbsp Ghee Unsalted butter can be used.
  • 1 tsp Ground Coriander
  • 1 tsp Turmeric
  • 1 tsp Dried Fenugreek Leaves
  • 1 tsp Ajwain Seeds Can be omitted.
  • 1 tsp Salt
  • 1 tbsp Brown Sugar Granulated sugar can be used.
  • Oil for frying Sunflower or Vegetable Oil Essential for crispiness.
For the Cheese Coating
  • 1 cup Medium Cheddar Cheese Grated.
  • 2 tbsp Spring Onions Chopped, substitute with chives if desired.
  • 2 tbsp Coriander Fresh is best.
  • 1 tsp Cumin Seeds Toast for enhanced flavor.
For the Lime-Coriander Sour Cream Dip
  • 1 cup Fresh Cilantro
  • 1/4 cup Fresh Mint Leaves
  • 1 tbsp Lime (juice and zest)
  • 2 pcs Green Chillies Adjust spice level.
  • 1 cup Sour Cream Greek yogurt can be used.
  • to taste Additional Salt and Sugar For seasoning.

Method
 

Churro Preparation
  1. Combine flour and dry spices in a stand mixer until well mixed.
  2. Boil water and ghee together, then carefully pour it into the flour mixture. Stir until smooth.
  3. Chill the dough in a piping bag for 30 minutes.
  4. Prepare the cheese coating by mixing cheddar cheese, chopped spring onions, fresh coriander, and crushed cumin in a bowl.
  5. Heat oil in a deep pan to 190°C (375°F) and test the heat.
  6. Pipe churro dough into hot oil, frying until golden and crispy, about 2 minutes per side.
  7. Toss the fried churros in the cheese mixture while they're still hot.
  8. Prepare the dip by blending cilantro, mint leaves, lime juice, and green chillies into the sour cream.
  9. Serve churros hot with the lime-coriander sour cream dip.
