  • 4 stalks Celery sliced diagonally
  • 1/2 cup Flat-leaf Parsley chopped
  • 2 tablespoons Tarragon or fresh dill
  • 1 tablespoon Dill or dried dill (use 1/3 amount)
  • 1/4 cup Toasted Slivered Almonds or walnuts/pecans
  • 1/4 cup Golden Raisins or dried cranberries
For the Dressing
  • 1/4 cup Olive Oil extra virgin recommended
  • 2 tablespoons White Wine Vinegar or apple cider vinegar
  • 1 teaspoon Dijon Mustard or yellow mustard
  • 1 teaspoon Honey or agave syrup for vegan
  • to taste Salt for seasoning
  • to taste Freshly Ground Black Pepper for seasoning

Method
 

Preparation
  1. Wash, trim, and slice fresh celery stalks diagonally into thin pieces.
  2. In a large bowl, add the sliced celery along with chopped flat-leaf parsley, tarragon, and dill. Toss gently to mix.
  3. Fold in the toasted slivered almonds and golden raisins.
  4. In a small bowl, mix together olive oil, white wine vinegar, Dijon mustard, and honey. Whisk until smooth.
  5. Drizzle the dressing over the celery-herb mixture. Toss gently to coat.
  6. Sprinkle with salt and freshly ground black pepper to taste.
  7. Allow the salad to sit for about 15 minutes to enhance the flavors.
  8. Serve in a shallow bowl, garnishing with extra herbs if desired.
