  • 8 oz Tomatillos Fresh, washed and husked
  • 1 large Onion White onion
  • 3 cloves Garlic Unpeeled
  • 2 whole Green Chilis (Jalapeños) Use poblano for a milder option
  • 1 cup Water or Broth Vegetable or chicken broth
  • 2 tbsp Olive Oil For roasting
  • 2 tbsp Lime Juice Freshly squeezed
  • 1/4 cup Cilantro Optional

Method
 

Making the Sauce
  1. Preheat your oven to 400°F (200°C).
  2. Toss the tomatillos, onion, jalapeños, and unpeeled garlic with olive oil and salt on a baking sheet.
  3. Bake the vegetables until they’re browned on all sides, about 30 minutes.
  4. Remove the skins from the garlic and discard the seeds from the chilis.
  5. In a blender, combine the roasted veggies with water or broth; blend until smooth.
  6. Pour the mixture into a saucepan, bring it to a boil, then reduce the heat and let it simmer for about 10 minutes.
  7. Stir in the cilantro and lime juice, adjusting salt and pepper to taste.
