How to Make
- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Whisk together cornstarch into heavy cream in a saucepan over medium-low heat until well combined. Then, add in the butter, minced garlic, thyme leaves, kosher salt, and black pepper. Heat until melted and fragrant.
- Slice the sweet potatoes thinly, about 1/8-inch thick. Arrange these slices evenly in your prepared baking dish.
- Pour the warm cream mixture over the sweet potatoes, ensuring every layer is coated.
- Bake covered with foil for 30 minutes.
- Uncover and sprinkle grated Parmesan cheese over the top. Return to the oven and bake for an additional 10 minutes.
- Rest the dish for 10 minutes once out of the oven.
