How to Make
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Whisk together cornstarch into heavy cream in a saucepan over medium-low heat until well combined. Then, add in the butter, minced garlic, thyme leaves, kosher salt, and black pepper. Heat until melted and fragrant.
  3. Slice the sweet potatoes thinly, about 1/8-inch thick. Arrange these slices evenly in your prepared baking dish.
  4. Pour the warm cream mixture over the sweet potatoes, ensuring every layer is coated.
  5. Bake covered with foil for 30 minutes.
  6. Uncover and sprinkle grated Parmesan cheese over the top. Return to the oven and bake for an additional 10 minutes.
  7. Rest the dish for 10 minutes once out of the oven.
