Ingredients
  

For the Rice
  • 2 cups Glutinous Rice Short-grain rice can be substituted.
For the Sauce
  • 3 tablespoons Dark Soy Sauce Can be swapped with regular soy sauce.
  • 1 tablespoon Soy Sauce Adjust based on preference for saltiness.
  • 1 tablespoon Cane Sugar Brown sugar or maple syrup are alternatives.
  • 2 tablespoons Sesame Oil Can mix with another oil if needed.
  • 1 teaspoon Ground White Pepper Black pepper can be used instead.
For the Filling
  • 1 block Extra Firm Tofu Tempeh or seitan can be used.
  • 8 ounces Fresh Shiitake Mushrooms Button or portobello mushrooms are good substitutes.
  • 3 cloves Garlic Finely minced for best flavor.
  • 1 inch Ginger Fresh, grated.
For the Greens
  • 2 cups Mustard Greens Bok choy, spinach, or napa cabbage work well.
For Cooking
  • 2 cups Vegetable Broth or Water Broth enhances flavor.

Method
 

Preparation
  1. Soak the Rice: Rinse the glutinous rice thoroughly under cold water, then soak it in water for at least 1 hour, or overnight for the best texture.
  2. Steam the Rice: Drain and transfer the rice to a steamer. Steam for 25-40 minutes until chewy and slightly translucent.
  3. Prepare the Sauce: In a mixing bowl, whisk together dark soy sauce, soy sauce, cane sugar, sesame oil, and ground white pepper.
  4. Cook Fillings: Heat a pan over medium heat with sesame oil. Sauté minced garlic and grated ginger until fragrant. Add cubed tofu and cook until golden brown, then add shiitake mushrooms.
  5. Combine and Coat: In the same pan, gently add the steamed rice, filling, and the sauce, mixing until the rice is evenly coated.
  6. Simmer: Add vegetable broth or water gradually while stirring, let it simmer until liquid is absorbed, about 5-10 minutes.
  7. Serve: Transfer to a serving bowl and garnish as desired.

Notes
