Ingredients
  

For the Dough
  • 1.5 cups warm milk or water between 110 to 115°F for activating the yeast
  • 1 tablespoon brown sugar adds sweetness
  • 1 package active dry yeast 0.25-ounce package
  • 4.5 cups all-purpose flour plus more if needed for kneading
  • 2 tablespoons melted butter for flavor and softness
  • 1 teaspoon fine sea salt enhances taste
For Boiling
  • 9 cups water for boiling the pretzel bites
  • 0.33 cups baking soda for boiling
For the Topping
  • 1 large egg whisked with 1 tablespoon water for egg wash
  • pretzel salt or coarse sea salt for sprinkling

Method
 

Make the Dough
  1. In a large mixing bowl, combine the warm milk and sugar. Sprinkle the yeast on top and wait about 5 minutes until foamy.
  2. Add in the flour, melted butter, and salt. Stir to combine, then knead the dough for around 4 minutes until smooth and elastic.
  3. Transfer the dough to a lightly-oiled bowl. Cover with a damp towel and let it rest for 20 to 30 minutes until it doubles in size.
Boil and Bake
  1. Preheat the oven to 450°F. Line baking sheets with parchment paper. In a large saucepan, combine 9 cups of water with the baking soda and bring to a boil.
  2. Divide the risen dough into 12 pieces. Roll each piece into a rope about 3/4-inch wide and cut into 1-inch bites.
  3. Boil the pretzel bites in batches for about 30 seconds each, then transfer to the parchment-lined pan.
  4. Brush the tops with the egg wash and sprinkle with coarse sea salt.
  5. Bake for 12 to 14 minutes until golden brown. Let them cool for a few minutes.
  6. Optionally, brush with more melted butter before serving.
