Make the Dough
- In a large mixing bowl, combine the warm milk and sugar. Sprinkle the yeast on top and wait about 5 minutes until foamy.
- Add in the flour, melted butter, and salt. Stir to combine, then knead the dough for around 4 minutes until smooth and elastic.
- Transfer the dough to a lightly-oiled bowl. Cover with a damp towel and let it rest for 20 to 30 minutes until it doubles in size.
Boil and Bake
- Preheat the oven to 450°F. Line baking sheets with parchment paper. In a large saucepan, combine 9 cups of water with the baking soda and bring to a boil.
- Divide the risen dough into 12 pieces. Roll each piece into a rope about 3/4-inch wide and cut into 1-inch bites.
- Boil the pretzel bites in batches for about 30 seconds each, then transfer to the parchment-lined pan.
- Brush the tops with the egg wash and sprinkle with coarse sea salt.
- Bake for 12 to 14 minutes until golden brown. Let them cool for a few minutes.
- Optionally, brush with more melted butter before serving.
