- In a large pot, heat water or olive oil over medium heat. Add chopped onion, carrots, celery, and garlic; sauté for about 5 minutes until soft.
- Stir in paprika, cumin, and curry powder. Sauté for an additional minute.
- Add green beans, diced tomatoes, chopped potatoes, lentils, and vegetable broth. Stir and bring to a boil.
- Lower the heat, cover the pot askew, and let it simmer for 30 to 35 minutes until lentils and potatoes are tender.
- In the last 5 minutes of cooking, mix in spinach or kale. Adjust consistency with water if needed and finish with lemon juice.
- Serve hot, garnished with fresh parsley, alongside cornbread or artisan bread.
