  • 4 cups low-sodium beef broth or chicken broth

How to Make Taco Soup
  1. Heat a large soup pot over medium heat. Add the lean ground beef or turkey, cooking until browned—this should take about 5-7 minutes. Drain any excess grease.
  2. Add the minced garlic to the pot and cook for 1-2 minutes until fragrant.
  3. Stir in the chili powder, ground cumin, salt, oregano, paprika, onion powder, and black pepper. Then, add the crushed tomatoes (undrained), diced green chiles, kidney beans, black beans, corn, and beef broth. Mix well to combine all.
  4. Bring your mixture to a low boil, then reduce the heat to medium-low. Cover the pot and let it simmer for about 20 minutes, stirring occasionally until heated through and flavors meld beautifully.
  5. Ladle it into bowls and garnish with your favorite toppings, such as shredded cheese, sour cream, or fresh cilantro.
