Preparation Instructions
  1. Prepare the Slow Cooker: Lightly spray the inside of your slow cooker with non-stick cooking spray.
  2. Brown the Beef Mixture: In a skillet, brown the ground beef with diced onions and minced garlic over medium-high heat for 5-7 minutes.
  3. Combine Ingredients: Transfer the cooked beef mixture into the slow cooker. Add the dark red kidney beans, petite diced tomatoes, frozen corn, and seasonings. Stir until well combined.
  4. Layer the Potatoes: Neatly layer the sliced Yukon Gold potatoes on top of the mixture.
  5. Cook to Perfection: Cover the slow cooker, cooking on high for 5 hours or low for 7 hours until the potatoes are fork-tender.
  6. Add the Cheese: About 15 minutes before serving, sprinkle the cheese over the top and cover again.
