Cooking Instructions
  1. Brown the Pork: In a large cast iron pot, cook diced pork over medium heat until it's nicely browned, about 5-7 minutes.
  2. Cook the Onion: In the same pot, add the diced onion and sauté until translucent, about 5 minutes.
  3. Add Spices: Stir in garlic powder, green chili powder, celery salt, oregano, and cumin. Sauté for 3 minutes.
  4. Combine Ingredients: Pour in chicken stock, green enchilada sauce, and beer. Add cilantro, jalapenos, and diced Hatch chiles, then return the browned pork. Stir to combine.
  5. Simmer: Cook over medium-low heat for at least 1 hour, ideally 3 hours, stirring occasionally.
