Ingredients

For the Soup
  • 2 pounds pork shoulder diced
  • 4 cups tomatoes ripe and diced
  • 2 cups carrot sliced
  • 2 cups corn on the cob kernels removed
  • 1 large onion chopped
  • 4 cups yellow potatoes diced
  • 10 cups water
  • 2 tablespoons chicken bouillon powder to taste
  • 1 teaspoon salt to taste
  • 1/4 cup green onion for garnish

Equipment

  • Large pot
  • Pressure Cooker

Method

How to Make ABC Soup
  1. Bring a large pot filled halfway with water to a boil over medium-high heat. Add the diced pork and boil for 3-5 minutes until scum surfaces, ensuring a cleaner broth.
  2. Discard the cloudy water and rinse both the meat and pot to eliminate impurities. Return the meat to the pot, ready for the next delicious step.
  3. Toss in the carrots, tomatoes, potatoes, corn, and onions along with 10 cups of water.
  4. If using the stovetop, cover and bring everything to a boil on medium-high heat. Then, reduce to low-medium heat, simmering for 1 ½ to 2 hours while skimming off any scum from the surface occasionally.
  5. For a quicker option, seal the lid and valve on your pressure cooker and cook on high pressure for 45 minutes.
  6. Skim the soup to remove any oil or scum that surfaces. Season your comforting pot of ABC Soup with chicken bouillon powder and salt to your liking.
  7. Ladle the soup into bowls, garnishing with finely chopped green onions for a fresh finish.
