Steps to Prepare
- Preheat a nonstick pan over medium heat.
- Prepare the salmon by cutting it into 4 servings and season with salt and pepper.
- Sauté the salmon skin-side down in the heated pan for about 5 minutes.
- Flip the salmon carefully, cover, and cook for an additional 2 minutes, then keep warm.
- Reduce heat and add butter and garlic to the same pan; sauté for about 1 minute.
- Mix a slurry with 1 tbsp of milk and cornstarch until smooth.
- Add remaining milk to the pan, and whisk in the cornstarch slurry until thickened.
- Combine in Parmesan, salt, pepper, cherry tomatoes, spinach, and sun-dried tomatoes.
- Return the salmon to the pan and heat for an additional minute before serving.
