Preparation
- Line a baking tray with parchment or wax paper.
- In a mixing bowl, whip together yogurt, peanut butter, and sweetener until smooth.
- Scoop blobs of your mixture onto the prepared tray and press a popsicle stick into each mound.
- Sprinkle chopped peanuts on top if using, then freeze your bars until firm, about 1-2 hours.
- Melt chocolate chips in the microwave or a double boiler, stir in coconut oil if using.
- Dip each bar into the melted chocolate until completely coated and place back on the tray.
Optional Decoration
- Drizzle with extra melted chocolate for a decorative touch!
