For the Coating
  • 1 cup Chocolate Chips Use dairy-free for a vegan option
  • 2 tablespoons Coconut Oil Optional for a smoother coating
For Topping (optional)
  • 1/4 cup Chopped Peanuts Substitute with any preferred nut

Method
 

Preparation
  1. Line a baking tray with parchment or wax paper.
  2. In a mixing bowl, whip together yogurt, peanut butter, and sweetener until smooth.
  3. Scoop blobs of your mixture onto the prepared tray and press a popsicle stick into each mound.
  4. Sprinkle chopped peanuts on top if using, then freeze your bars until firm, about 1-2 hours.
  5. Melt chocolate chips in the microwave or a double boiler, stir in coconut oil if using.
  6. Dip each bar into the melted chocolate until completely coated and place back on the tray.
Optional Decoration
  1. Drizzle with extra melted chocolate for a decorative touch!
