  • 1/2 cup Raw Almonds Feel free to substitute with other nuts if desired.

How to Make Healthy Almond Joys
  1. Prepare Coconut Base: In a food processor, blend the unsweetened shredded coconut, melted coconut oil, maple syrup (or honey), vanilla extract, and sea salt until you have a sticky mixture. Be careful not to overdo it!
  2. Form Bites: Take a mini muffin pan and press the coconut mixture into each cup, packing it down firmly to ensure they hold their shape.
  3. Melt Chocolate: In a heatproof bowl, combine your chosen chocolate bars and coconut oil. Microwave in 30-second intervals, stirring in between until completely smooth and melted.
  4. Assemble Bites: Spoon the melted chocolate generously over the coconut layer in each muffin cup and place a raw almond in the center of each bite.
  5. Freeze: Pop the tray into the freezer for 3-4 hours. Once solid, remove the bites from the muffin pan and store in an airtight container.
  6. Optional Bars Variation: Shape the coconut mixture into rectangles instead of pressing it into the muffin pan, following the same coating and freezing steps.
