  • 2 tablespoons Steak Seasoning Use your favorite pre-mixed blend or a simple homemade mix of salt, pepper, and garlic powder
For the Cilantro Yogurt Sauce
  • 1 cup Unsweetened Plain Greek Yogurt
  • 1/2 cup Fresh Cilantro Leaves Use extra for a more pronounced flavor
  • 2 tablespoons Fresh Lime Juice Feel free to substitute with lemon juice if needed
  • 1 teaspoon Lime Zest
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Ground White Pepper To taste

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Layer slices of thin sirloin with baby spinach, roasted Hatch chiles, and crumbled queso fresco.
  3. Roll the beef tightly and secure each with a toothpick.
  4. Season the roll-ups generously with your steak seasoning.
  5. Place the roll-ups on a baking sheet and roast for approximately 15 minutes, until cooked through.
  6. Prepare the cilantro yogurt sauce by mixing Greek yogurt, chopped cilantro, lime juice, lime zest, salt, and white pepper in a bowl.
  7. Serve the roll-ups on a bed of rice or sautéed veggies and drizzle with the fresh cilantro sauce.
