How to Make Ground Turkey Sweet Potato Skillet
  1. Warm up the olive oil in a large cast iron skillet over medium-high heat for about 1-2 minutes until hot and shimmering.
  2. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  3. Stir in the ground turkey, breaking it apart as it cooks for approximately 8 minutes until browned.
  4. Mix in cumin, chili powder, salt, and pepper, stirring until well incorporated.
  5. Add the diced onion and yellow bell pepper, cooking for 3-4 minutes until softened.
  6. Stir in diced sweet potatoes and pour in water. Cover and cook for 6-8 minutes until tender.
  7. Remove the lid, adjust seasoning if needed, and sprinkle shredded mozzarella on top to melt.
  8. Sprinkle fresh cilantro on top before serving.
