  • 1 tbsp Honey or agave/maple syrup for vegan option
  • 1 tbsp Dijon Mustard
  • 3 tbsp Grapefruit Juice freshly squeezed
  • 2 tbsp Balsamic Vinegar
  • 4 tbsp Extra Virgin Olive Oil
  • to taste Salt
  • to taste Pepper
Salad
  • 6 cups Fresh Baby Spinach Leaves
  • 1 medium Grapefruit juicy segments
  • 1 medium Avocado ripe, diced
  • 1/2 cup Toasted Walnuts or pecans/almonds
  • 1/2 cup Crumbled Feta omit for vegan version or use goat cheese

Method
 

Preparation
  1. In a medium bowl, whisk together the garlic, honey, Dijon mustard, grapefruit juice, balsamic vinegar, olive oil, salt, and pepper until emulsified.
  2. In a large salad bowl, combine the fresh baby spinach, grapefruit segments, diced avocado, toasted walnuts, and crumbled feta.
  3. Drizzle the dressing over the salad and gently toss to coat without bruising the ingredients.
