- In a mixing bowl, combine bread flour, salt, and sugar. Gradually add warm water and olive oil, kneading until smooth. Cover the bowl with a cloth and let the dough rest for 20 minutes.
- In a separate bowl, mix together the baby spinach, chopped onion, minced garlic, mozzarella, feta, and egg. Stir gently until all ingredients are combined.
- After the dough has rested, divide it into 4 equal pieces. Roll each piece into a rectangle shape. Place a scoop of filling on one half of each rectangle, then fold the other half over, sealing the edges tightly. Prick the top with a fork to allow steam to escape.
- Heat olive oil in a frying pan over medium heat. Carefully place each gozleme in the pan, cooking for 3-4 minutes on each side until the crust is golden brown and crispy.
- Slice each gozleme into wedges. Drizzle with a touch of fresh lemon juice and sprinkle with chopped parsley for an added burst of flavor.
