Method
 

Instructions
  1. In a mixing bowl, combine bread flour, salt, and sugar. Gradually add warm water and olive oil, kneading until smooth. Cover the bowl with a cloth and let the dough rest for 20 minutes.
  2. In a separate bowl, mix together the baby spinach, chopped onion, minced garlic, mozzarella, feta, and egg. Stir gently until all ingredients are combined.
  3. After the dough has rested, divide it into 4 equal pieces. Roll each piece into a rectangle shape. Place a scoop of filling on one half of each rectangle, then fold the other half over, sealing the edges tightly. Prick the top with a fork to allow steam to escape.
  4. Heat olive oil in a frying pan over medium heat. Carefully place each gozleme in the pan, cooking for 3-4 minutes on each side until the crust is golden brown and crispy.
  5. Slice each gozleme into wedges. Drizzle with a touch of fresh lemon juice and sprinkle with chopped parsley for an added burst of flavor.
