Ingredients
  

For the Marinade
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil can replace with olive oil
  • 1 tablespoon honey or maple syrup omit for sugar-free
  • 1 tablespoon rice vinegar white wine vinegar can substitute
  • 2 tablespoons fresh grated ginger ground ginger can substitute
  • 2 cloves minced garlic can be omitted
For the Cod
  • 2 fillets cod substitute with halibut, tilapia, or snapper
  • 1 tablespoon cornstarch optional
  • 2 tablespoons water for thickening glaze
For Garnish
  • 2 tablespoons green onions sliced thin
  • 1 tablespoon sesame seeds for topping

Method
 

Instructions
  1. In a bowl, whisk together the low-sodium soy sauce, sesame oil, honey or maple syrup, rice vinegar, minced garlic, and fresh grated ginger until well combined.
  2. Place the cod fillets in a shallow dish or resealable bag, then pour the marinade over them. Allow it to sit for 15-30 minutes.
  3. Preheat your oven to 400°F. Lay the marinated cod on a parchment-lined baking dish and bake for 12-15 minutes, or until the cod flakes easily with a fork.
  4. Alternatively, heat some oil in a skillet over medium heat. Cook the marinated cod for 3-4 minutes per side, basting with extra marinade.
  5. In a saucepan, transfer any leftover marinade from the cod. Bring it to a simmer over medium heat, stirring occasionally, and thicken it with cornstarch mixed with water if desired.
  6. Drizzle the warm glaze over the cooked cod, then garnish with sliced green onions and sesame seeds. Pair it with steamed vegetables or rice.

Notes

Marination time should not exceed 30 minutes to prevent the cod from becoming too salty. Pat cod fillets dry before marinating.
