- In a bowl, whisk together the low-sodium soy sauce, sesame oil, honey or maple syrup, rice vinegar, minced garlic, and fresh grated ginger until well combined.
- Place the cod fillets in a shallow dish or resealable bag, then pour the marinade over them. Allow it to sit for 15-30 minutes.
- Preheat your oven to 400°F. Lay the marinated cod on a parchment-lined baking dish and bake for 12-15 minutes, or until the cod flakes easily with a fork.
- Alternatively, heat some oil in a skillet over medium heat. Cook the marinated cod for 3-4 minutes per side, basting with extra marinade.
- In a saucepan, transfer any leftover marinade from the cod. Bring it to a simmer over medium heat, stirring occasionally, and thicken it with cornstarch mixed with water if desired.
- Drizzle the warm glaze over the cooked cod, then garnish with sliced green onions and sesame seeds. Pair it with steamed vegetables or rice.
