  1. Poach Chicken: Begin by filling a large pot with water to cover the chicken quarters by about 5 cm. Bring to a boil, add chicken pieces, and boil for approximately 5 minutes. Turn off heat, cover, and allow to poach for 40 minutes.
  2. Prepare Ginger Scallion Sauce: While chicken cooks, combine grated ginger, chopped spring onion, and salt in a bowl. Heat oil in a small pot until hot and lightly smoking, then stir in the ginger mixture.
  3. Serve: Once chicken is done, cut into serving pieces. Drizzle ginger scallion sauce generously over the chicken and top with reserved green onion tops.
