  2. Heat sesame oil in a Dutch oven over medium-high heat; season short ribs and brown for 4-5 minutes per side.
  3. Combine miso paste, soy sauce, rice vinegar, brown sugar, ginger, and garlic in a bowl; whisk until smooth.
  4. Deglaze the pan with beef broth, scraping up browned bits for added flavor.
  5. Return the ribs to the pot, pour the miso mixture and remaining beef broth over them.
  6. Cover the Dutch oven, transfer to the oven, and braise for 3 hours until fork-tender.
  7. Optional: Remove ribs, bring sauce to a boil, mix cornstarch with water, then stir in to thicken.
  8. Place ribs back in the sauce to soak up more flavor before serving.
