How to Make Gâteau Breton
- Preheat oven to 350°F (180°C) and prepare a round Flexipan mold.
- Whisk together egg yolks, sugar, vanilla bean paste, and sea salt until creamy.
- Add softened butter and beat until smooth and fluffy.
- Sift together flour and baking powder, and gradually add to the mixture.
- Pour the batter into the prepared mold and brush the surface with egg yolk.
- Bake for about 35 minutes or until a toothpick inserted comes out clean.
- Cool completely in the mold, then unmold, slice, and serve.
