How to Make Gâteau Breton
  1. Preheat oven to 350°F (180°C) and prepare a round Flexipan mold.
  2. Whisk together egg yolks, sugar, vanilla bean paste, and sea salt until creamy.
  3. Add softened butter and beat until smooth and fluffy.
  4. Sift together flour and baking powder, and gradually add to the mixture.
  5. Pour the batter into the prepared mold and brush the surface with egg yolk.
  6. Bake for about 35 minutes or until a toothpick inserted comes out clean.
  7. Cool completely in the mold, then unmold, slice, and serve.
