  • 1 lb Green Beans Trim stems before roasting
  • 1 lb Baby Potatoes Halve lengthwise for roasting
For the Coating
  • 2 tbsp Olive Oil For coating vegetables
  • 1 tsp Kosher Salt
  • 1 tsp Pepper
For the Garlic Butter
  • 1/2 cup Butter Softened
  • 4 cloves Garlic Minced

Method
 

Preparation
  1. Preheat your oven to 450°F.
  2. In a large bowl, toss green beans with olive oil, salt, and pepper. Arrange in the center of a baking sheet.
  3. Toss baby potatoes with olive oil, salt, and pepper, and place them cut sides down alongside the green beans.
  4. Lay the pork tenderloins over the green beans, brush with hoisin sauce, and season with salt and pepper.
  5. Roast in the oven for about 20-25 minutes until the pork reaches 140°F.
  6. Mix softened butter, minced garlic, and chives in a bowl to make garlic butter.
  7. Let the pork rest for a few minutes, then slice and top with garlic butter.
