How to Make Fudgy Chewy Brookies
- Preheat your oven to 160°C (320°F) for fan or 170°C (340°F) conventional.
- In a heatproof bowl over simmering water, melt the dark chocolate and butter until smooth.
- Beat the eggs with caster sugar and demerara sugar until fluffy and pale, about 5 minutes.
- Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl, and gently fold in chocolate chips.
- Carefully fold the melted chocolate mixture into the whipped egg mixture, then add dry ingredients.
- Scoop batter onto a lined baking tray and bake for 12-14 minutes until set but soft in the center.
- Allow brookies to cool on the tray for a few minutes before transferring to a wire rack.
