How to Make Fudgy Chewy Brookies
  1. Preheat your oven to 160°C (320°F) for fan or 170°C (340°F) conventional.
  2. In a heatproof bowl over simmering water, melt the dark chocolate and butter until smooth.
  3. Beat the eggs with caster sugar and demerara sugar until fluffy and pale, about 5 minutes.
  4. Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl, and gently fold in chocolate chips.
  5. Carefully fold the melted chocolate mixture into the whipped egg mixture, then add dry ingredients.
  6. Scoop batter onto a lined baking tray and bake for 12-14 minutes until set but soft in the center.
  7. Allow brookies to cool on the tray for a few minutes before transferring to a wire rack.
