Ingredients
  

For the Salad
  • 1.5 pounds Green beans trimmed and cut to 2 to 3 inch long pieces
  • 1 pinch Kosher salt to enhance flavors during boiling
  • 0.5 cup Red onion finely chopped
  • 2 tablespoons Balsamic vinegar adds a tangy depth
  • 4 tablespoons Extra virgin olive oil for a smooth finish
  • 0.75 cup Fresh basil leaves chopped
  • 0.75 cup Parmesan cheese freshly grated
  • Freshly ground black pepper to taste

Method
 

Steps
  1. Place the chopped red onion in a small bowl of water for about 10 minutes.
  2. Bring a large pot of salted water to a rolling boil.
  3. Add the green beans to the boiling water and blanch for about 2 minutes.
  4. Prepare a large bowl of ice water and transfer the green beans from boiling water into the ice bath.
  5. After a few minutes in the ice bath, drain the green beans and the soaked red onions well.
  6. In a large bowl, toss together the cooled green beans, red onion, and chopped basil. Drizzle olive oil over the top and gently mix.
  7. Pour in balsamic vinegar and sprinkle the freshly grated Parmesan cheese. Toss gently and season with salt and pepper.
  8. Let the salad chill in the refrigerator until ready to serve.
