Ingredients
  

For the Peanut Sauce
  • 1/2 cup creamy natural peanut butter
  • 1 tbsp soy sauce or tamari for gluten-free
  • 2 tbsp fresh lime juice freshly squeezed
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic minced
  • 1 tbsp ginger fresh, minced
  • 2 tbsp water adjust to desired thickness
For the Bowls
  • 8 oz rice noodles rinsed under cold water
  • 1 lb shrimp or tofu/chicken
  • 1 medium red bell pepper
  • 2 cups red cabbage shredded
  • 1 cup cucumbers sliced
  • 1 cup carrots shredded
  • 1 medium avocado optional
  • 1 medium jalapeño sliced
  • 1/4 cup fresh cilantro for garnish
  • 1 lime lime wedges for serving

Method
 

Preparation Instructions
  1. Prep the Ingredients by slicing and shredding all your vegetables.
  2. Cook the Noodles according to the package instructions, then rinse under cold water and set aside.
  3. Whisk the Peanut Sauce by combining all ingredients in a medium bowl until smooth.
  4. Sauté the Shrimp in a skillet over medium-high heat until opaque and slightly golden.
  5. Assemble the Bowls with rice noodles, sautéed shrimp, veggies, and peanut sauce.
