Method

Steps
  1. Rinse and Prepare: Begin by rinsing the fine bulgur wheat in a fine sieve under cold running water. Drain well; this will help ensure a soft texture in your croquettes.
  2. Mix Kamouneh: In a large mixing bowl, combine the rinsed bulgur with the kamouneh spices, salt, finely chopped green chili, red bell pepper, onion, and fresh herbs. Stir until everything is thoroughly mixed.
  3. Combine Meat and Mix: In a separate bowl, combine the finely ground lean lamb with three-quarters of the vegetable and spice mixture using your hands. Mix until fully combined, ensuring the meat soaks up all those flavorful ingredients.
  4. Shape Croquettes: With wet hands, take small portions of the mixture and form them into croquettes. Shape them using your fingers to create ridges, allowing for a beautiful presentation.
  5. Serve Fresh: Serve immediately, showcasing your beautiful croquettes on a platter. If you have leftovers, store them in the fridge for up to a day or freeze for later enjoyment.
