How to Make Fluffy Oladi
- Warm 1 cup of Kefir and 1/4 cup of water in the microwave for 30 seconds. In a bowl, whisk 1 egg, 1/2 teaspoon salt, and 2 tablespoons sugar; mix in the warm Kefir until combined.
- Gradually stir in 2 cups of all-purpose flour, mixing until smooth. If the batter feels too thin, add 2-3 extra tablespoons of flour.
- Gently fold in 1/2 teaspoon of baking soda and the diced apples.
- Heat 2 tablespoons of oil in a skillet over medium heat. Drop heaping tablespoons of batter into the skillet, frying for 2-3 minutes until golden brown on one side. Flip and cook for another minute.
- Transfer cooked Oladi to a plate and repeat until all the batter is used. Serve warm with jam, honey, or a dollop of sour cream.
