  • 2 cups All-Purpose Flour Add 2-3 extra tablespoons if too thin
  • 2 tablespoons Sugar Adjust according to taste
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 2 cups Diced Apples Use any sweet apple variety
  • 2 tablespoons Neutral Oil (e.g., coconut or avocado oil) For frying

How to Make Fluffy Oladi
  1. Warm 1 cup of Kefir and 1/4 cup of water in the microwave for 30 seconds. In a bowl, whisk 1 egg, 1/2 teaspoon salt, and 2 tablespoons sugar; mix in the warm Kefir until combined.
  2. Gradually stir in 2 cups of all-purpose flour, mixing until smooth. If the batter feels too thin, add 2-3 extra tablespoons of flour.
  3. Gently fold in 1/2 teaspoon of baking soda and the diced apples.
  4. Heat 2 tablespoons of oil in a skillet over medium heat. Drop heaping tablespoons of batter into the skillet, frying for 2-3 minutes until golden brown on one side. Flip and cook for another minute.
  5. Transfer cooked Oladi to a plate and repeat until all the batter is used. Serve warm with jam, honey, or a dollop of sour cream.
