Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Stir in the eggs and cinnamon into the mashed bananas until well combined.
  4. Add the oats to the banana mixture, folding gently until everything is evenly incorporated.
  5. If desired, fold in chopped nuts and chocolate chips.
  6. Line an 8x8 inch baking pan with parchment paper. Pour the mixture into the pan.
  7. Place in the oven and bake for about 25-30 minutes until a toothpick comes out clean.
  8. Allow the bars to cool completely in the pan before slicing.
