  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chipotle Chili Powder Adjust to heat preference.
  • 1/2 teaspoon Black Pepper Freshly ground is ideal.
Avocado Corn Salsa Ingredients
  • 2 pieces Avocados Choose ripe but firm.
  • 1 cup Cherry Tomatoes Or Roma for vibrant color.
  • 1 cup Fresh Corn Canned corn can substitute.
  • 1/4 cup Red Onion Green onions can work as a milder replacement.
  • 1 piece Red Bell Pepper Any color bell pepper can be used.
  • 1 piece Jalapeño Pepper Remove seeds for less heat.
  • 1/4 cup Cilantro Parsley can substitute.
  • 1 clove Garlic Fresh is best, garlic powder can substitute.
  • 1 tablespoon Additional Lime Juice To taste.

Method
 

Preparation Steps
  1. Pound chicken breasts to an even thickness for uniform cooking. Marinate with olive oil, lime juice, and spices; let rest for 30 minutes.
  2. Preheat grill or skillet over medium-high heat (375-450°F).
  3. Cook chicken for 3-5 minutes per side until internal temperature reaches 165°F.
  4. Let the chicken rest for 5 minutes before slicing.
  5. Combine diced avocados, tomatoes, corn, red onion, bell pepper, jalapeño, cilantro, garlic, lime juice, salt, and pepper in a bowl for the salsa.
  6. Serve sliced chicken with Avocado Corn Salsa on the side.
