  • 1 can Chickpeas drained and rinsed
  • 1 cup Feta Cheese crumbled
  • 1/2 cup Dried Cranberries low-sugar varieties recommended
  • 1/4 cup Red Onion chopped
  • 1/4 cup Fresh Parsley chopped
For the Lemon Vinaigrette
  • 1/4 cup Extra Virgin Olive Oil high-quality recommended
  • 2 tablespoons Fresh Lemon Juice freshly squeezed
  • 1 teaspoon Dijon Mustard optional
  • 1 tablespoon Honey or Maple Syrup adjust to taste
  • 1 clove Garlic minced

Method
 

Preparing the Salad
  1. In a large bowl, gently combine the drained chickpeas, crumbled feta cheese, dried cranberries, chopped red onion, and fresh parsley. Toss everything together to blend the flavors beautifully.
Making the Lemon Vinaigrette
  1. In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey or maple syrup, minced garlic, and a pinch of salt and pepper until well emulsified.
Combine and Chill
  1. Pour the vinaigrette over the salad mixture and toss gently until all the ingredients are well coated. For the best flavor, chill in the refrigerator for 15–20 minutes before serving to allow the flavors to meld.
