  • 1/2 cup Granulated Sugar Adjust according to sweetness of mangoes
  • 1 cup Coconut Milk Use pure coconut milk for creaminess
  • 1 tbsp Gelatin or Agar Agar Powder Opt for agar for a vegan version
  • 1/4 cup Cold Water Make sure it's cold

Method
 

  1. Peel, pit, and dice your ripe mangoes. Blend them until smooth, then strain through a fine sieve for a luxuriously silky puree.
  2. In a mixing bowl, sprinkle the gelatin or agar agar over the cold water. Let it sit for 30-45 seconds to thicken.
  3. Gently mix together the sugar, coconut milk, and your luscious mango puree into the bloomed gelatin or agar until everything is well combined.
  4. Transfer the mixture to a pot and warm it over medium-low heat, whisking constantly for about 4-5 minutes.
  5. Pour the mixture into serving bowls or molds, smooth the tops, cover, and refrigerate for at least 6 hours or overnight.
