- Peel, pit, and dice your ripe mangoes. Blend them until smooth, then strain through a fine sieve for a luxuriously silky puree.
- In a mixing bowl, sprinkle the gelatin or agar agar over the cold water. Let it sit for 30-45 seconds to thicken.
- Gently mix together the sugar, coconut milk, and your luscious mango puree into the bloomed gelatin or agar until everything is well combined.
- Transfer the mixture to a pot and warm it over medium-low heat, whisking constantly for about 4-5 minutes.
- Pour the mixture into serving bowls or molds, smooth the tops, cover, and refrigerate for at least 6 hours or overnight.
