Method
 

Preparation Steps
  1. Preheat the oven to 425°F (220°C).
  2. Prepare the chicken by cutting tenders into large pieces and dicing zucchini and sweet potato.
  3. Slice the lemon into wedges and finely chop the red onion.
  4. Line a sheet pan with parchment paper.
  5. Arrange chicken pieces on one side of the sheet pan and the zucchini, red onion, and sweet potatoes on the other side.
  6. Sprinkle the AIP Greek seasoning mix over the chicken and vegetables, then drizzle with olive oil.
  7. Bake for 20 minutes, checking that the chicken reaches 145°F (63°C) and the vegetables are tender.
