Preparation Steps
- Preheat the oven to 425°F (220°C).
- Prepare the chicken by cutting tenders into large pieces and dicing zucchini and sweet potato.
- Slice the lemon into wedges and finely chop the red onion.
- Line a sheet pan with parchment paper.
- Arrange chicken pieces on one side of the sheet pan and the zucchini, red onion, and sweet potatoes on the other side.
- Sprinkle the AIP Greek seasoning mix over the chicken and vegetables, then drizzle with olive oil.
- Bake for 20 minutes, checking that the chicken reaches 145°F (63°C) and the vegetables are tender.
