  • 4 pieces whole wheat tortillas for a healthier option
  • 2 cups cooked shredded chicken use rotisserie for convenience
  • 1/2 cup BBQ sauce preferably low-sugar
  • 2 cups cheese mozzarella or cheddar
  • 1 cup vegetables optional bell peppers or onions
For Serving
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup light salad

How to Make BBQ Chicken Quesadillas
  1. Preheat your non-stick skillet over medium heat.
  2. Spread BBQ sauce over one side of each tortilla.
  3. Layer cooked chicken and cheese on the BBQ-coated side of half the tortillas.
  4. Add optional vegetables as desired.
  5. Fold the tortillas in half and place them in the skillet.
  6. Cook until golden brown and crisp, about 3-4 minutes per side.
