Ingredients
  

For the Udon Noodles
  • 200 grams Udon Noodles Can substitute with rice noodles, soba noodles, or spaghetti.
For the Beef Marinade
  • 200 grams Fresh Beef Thinly sliced; ribeye, sirloin, or flank steak are best.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Oyster Sauce Mushroom sauce works as a vegetarian substitute.
  • 1 tablespoon Corn Starch
  • 1 tablespoon Chinese White Rice Vinegar Can swap with apple cider vinegar.
For the Sauce and Noodles
  • 1 tablespoon Dark Soy Sauce
  • 1 tablespoon Fresh Ground Black Pepper Adjust according to heat preference.
  • 1 tablespoon Potato Starch Corn starch can be used as a substitute.
  • 100 milliliters Water Used to mix with sauces for desired consistency.
For The Vegetables
  • 100 grams Chinese Cabbage Can substitute with any leafy green like bok choy or spinach.
  • 1 medium White Onion Sliced.

  1. Marinate the Beef: In a bowl, mix minced garlic, sesame oil, soy sauce, oyster sauce, vinegar, and water with cornstarch. Toss the thinly sliced beef in this mixture and let it sit for 10 minutes to soak up those wonderful flavors.
  2. Make Black Pepper Sauce: Combine dark soy sauce, oyster sauce, black pepper, water, and potato starch in a separate bowl. Mix thoroughly so the sauce has a nice, smooth consistency ready for your noodles.
  3. Cook Udon Noodles: Bring water to a boil and cook the udon noodles for 1-2 minutes until slightly loose and tender. Drain and set them aside, ensuring they retain their chewy texture.
  4. Cook Beef: Heat a generous drizzle of oil in a wok, then stir-fry the marinated beef until it’s beautifully browned (around 2-3 minutes). Once cooked, remove the beef from the pan and set it aside.
  5. Combine Flavors: In the same pan, sauté minced garlic and sliced onion until fragrant and golden. Add the cooked udon noodles, beef, and prepared black pepper sauce. Gently toss everything with chopped Chinese cabbage until evenly combined and everything is heated through.
